RECIPE OF THE WEEK
FANCY WHITNEY BRASCIOLE
*** A fancy meal created this week for one family's Valentine celebration!***
Tracy Whitney shares:
I layered a paste of egg, breadcrumbs, and pressed fresh garlic on thinly sliced flank steak (called brasciole).
On top of that I sprinkled (lightly!) a layer of blue cheese, then a layer of fresh baby spinach. I rolled them and secured with a toothpick. Then I seared them in extra-virgin olive oil, just till they were lightly browned. I transferred them to the crockpot on low.
To the oil and drippings in the skillet, I added some white wine, a small can of tomato paste and about a cup of light sour cream. I whisked it all together, to get up all the goodies from the pan and simmered it for about 5 more minutes.
Then I dumped it all over the meat rolls in the crockpot and let them sit on low for about 5-6 hours.
I served it all over a bed of angel hair that had a layer of more fresh baby spinach on top.
