ALLERGEN-FREE CHICKEN SOUP
*** One mom shares a soup recipe that works for her family and two sons who have food allergies.***
Mary Ann Colegrove, Registered Dietitian shares:
Pasta/rice can be cooked up separate for people to add as wanted.
IF you store the soup with the starch in the broth, the starch gets mushy and less enjoyable in our family's opinion.
After the soup is refrigerated and fat rises to top, it can be scooped off and used in cookies, to flavor popcorn and/or other dishes as a fat source when a child is allergic to many food allergens. Often a child with many food allergies needs additional fat in the diet for needed calories. NOT all fat is bad fat (can you see the dietitian coming out in her?!)
4 chicken legs (not drum sticks but whole hind quarters)
Fill large soup pot with water and boil with legs in water for 10 min. Cut meat from bone and boil another 5 minutes.
Remove film from top as not necessary flavorful fat.
Add one Tablespoon Salt is suggested but varies depending on amount of water used.
My family accepts the soup with only this small amount of Salt. More can be added as needed. Add whole 20 peppercorns that will sink to the bottom (can be eaten only by people that enjoy them) but flavor is given to the soup. Add 2-3 Bay Leaves.
McCormick Spice brand company has a long history of knowledge about food allergies.
Add celery, onions, carrots as wanted. Suggestion is to add 2 celery stalks and ¼ large sweet onion chopped VERY FINE and 4 carrots with a larger cut.
Simmer until these vegetables are tender.
