Try the easy recipe below:



Serves: 6+

Prep time: Approximately 30-35 minutes.

These are fairly quick and easy. Very good for you too. My toddler loves these, but my older two run from anything that is green.


Preheat oven to 350.

Butter a 12 cup (preferably stoneware) muffin pan.

Mix together 6 eggs (preferably organic free-range)

1/2 to 1 cup (preferably raw) milk or cream, and about 8 to 10 oz thawed, chopped, well-drained spinach (preferably organic)

Add salt & pepper and or any other seasonings your family likes.

Pour into a muffin pan, fill each cup about half full. This should use all the mix. (It worked for me twice now.) Then divide about 1 cup of your choice of cheese (preferably raw unprocessed).

I used regular process cheese the first time and mozzarella the second, in each cup and bake for 20 to 30 minutes.

Let cool and they should plop right out in one piece. These can be frozen and reheated.
