Two recipes are listed below for the Wild West party theme....

Quick BBQ Chicken or Ribs

1. Heat oven to 350 degrees F.

2. Place either 6 spareribs or 6 pieces of chicken in a baking dish. Spread 2-3 teaspoons of olive or canola oil on the bottom of the dish.

3. Buy bottled BBQ sauce seasoned according to your taste and pour over and cover meat completely. Cook for at least 20-25 minutes until meat can easily be separated from the bone when poked with a fork.

4. Meat can also be cooked on an outside grill.

5. Serves 6.

Lemon Squares

2 cups all-purpose flour

½ cup confectioners sugar

2 sticks butter, melted

2 cups granulated sugar

1 teaspoon baking powder

4 large egg, slightly beaten

¼ cup fresh lemon juice

1 tablespoon plus 1 teaspoon grated lemon peel

Preheat oven to 350 degrees F. Lightly grease a 9 x 12 inch baking pan.

Sift the flour and confectioners’ sugar into a bowl. Add the melted butter, blend, and press the mixture into the pan.

Bake the flour mixture for 20 minutes, or until it is just beginning to turn golden. While the crust is baking, combine the sugar, baking powder, eggs, lemon juice, and lemon peel in a bowl.

Pour the sugar mixture over the warm crust, and bake it for 25 more minutes.

Cool the pastry on a rack. Cut into squares, and chill.

Before serving, sprinkle the lemon squares with confectioner’s sugar. Store them in an airtight container. Makes 16 squares.

Summer Party Theme:








Ingredients needed:

(Prep according to expected attendance)

□ 6-8 pieces of chicken or spareribs

□ BBQ sauce

□ 6 baking potatoes

□ 1 stick of butter

□ Sour cream

□ 1 dozen ears of corn

□ 1 bag of tossed salad mix

□ Bottle of salad dressing

□ Ingredients for lemon squares

Set-up for the party:

1. Borrow karaoke equipment and have a country music karaoke contest.

2. You may want to try square dancing to get your guests in the mood for the western theme dinner.

3. Gather the group and roast marshmallows over a campfire as a way to end the evening.

4. Send out the invitation wrapped in a bandanna that you can purchase at the dollar store and tell your friends to wear the bandanna to the party to make a western style outfit.
