A registered dietitian friend of mine, Wendy Howard shares a tasty recipe with us this week. Many of you will be baking over the holiday and Wendy shares this baking tip. "In baking, I love using Sucanat (Sugar Cane Natural) instead of white and brown sugar. I also use Whole Wheat Pastry Flour instead of all purpose flour, says Wendy. She explains, "both work great in recipes and make the recipes even healthier, in fact you can pick any recipe out of a Betty Crocker cookbook and do those substitutions." Wendy recommends trying it with Christmas cookies and baked goods this year.

Speaking of the holidays, there are only about four weeks left in 2007. Are you ready for 2008? Have you considered the option to stop dieting in 2008? and forever for that matter!!
As your family dietitian I say,it is possible to stop the cycle of dieting in your family even before 2008 begins!
My friend Cate Brizzell has written a book called "Real People Don't Diet" and it's basically the story of how her husband, Chris lost over 40 pounds and she dropped two dress sizes in just six months. They came up with a way to eat--not diet--that helped them lose the weight. Since so many people were asking them "How did you do it?", Cate (who is not a registered dietitian) decided to write a book about the experience.
Cate told me that she is firmly convinced that dieting is one of the most devastating things you can do to yourself emotionally. "Diets set us up for personal failure," explains Cate. On the other hand, Cate has found that reasonable and moderate food habits (and allowance for special foods and special occasions) are must less self-destructive and will work for just about any lifestyle.

Cate shares an email that Nancy Westley, who recently bought Cate's book, wrote last week. Here's what Nancy had to say:
"Hi! I had been a low-carb enthusiast for about 2 years until I became very bored with the same old foods. I missed some of my favorite foods and if I would indulge occasionally I felt I blew it, then thought why bother. So the rest of the day I pigged-out. That all or nothing thinking helped me put back 8 lbs. But after reading your book, I realized that I could have it all with the proper trade-off. So putting that theory to work this past Thanksgiving, and just eating exactly what I wanted and keeping portions small, trading sweet potatoes for pumpkin pie (no crust), I lost a pound. I couldn't believe the scale Monday morning. I was able to lose weight and eat a Thanksgiving meal. I now have hope for the holidays. Thank you for writing a book that teaches real people how to eat real food."

WENDY’S WHOLE WHEAT CARROT CAKE
Start to finish: 55 minutes
2 cups sugar or Sucanat (Sugar Cane Natural)
¾ cup expeller pressed canola oil
4 omega-3 eggs (Eggs Plus brand)
2 cups whole wheat pastry flour
1 tsp. salt
2 tsp. baking soda
1-1/2 tsp. cinnamon
3 cups grated carrots
½ cups chopped walnuts (optional)
Mix sugar, oil, and eggs.
Add flour, salt, soda, and cinnamon. Mix in carrots, and nuts.
Pour into greased 9 X 13 pan. Bake at 300 F for 45 minutes. Do not overbake.
8 ozs. low-fat cream cheese
¼ cup softened butter
2 tsp. vanilla (preferably alcohol free)
16 oz. box confectioner’s sugar
