The following website offers tips, downloadables, tracking sheets, etc. re: P.A.C.K. (Pack Assorted Colors for Kids) week - - a healthy eating intiative encouraging kids to eat more fruits and vegetables at school.

Chocolate Cake with More Health!


1 cup sugar

2 cups flour

1 cup cocoa (go for non dutched)* natural unsweetened. (Natural source of flavonal/antioxidants)

1 ˝ tsp. baking powder

1 1/2 tsp. baking soda

1/2 tsp. Salt

2 eggs

1 cup skim, soy or rice milk

˝ cup vegetable oil

2 tsp. Vanilla extract

1 cup boiling water

1)Heat oven to 350 degrees F. Grease and flour two 9 inch round baking pans. (or use muffin tins and fills 2/3 full. IF cook up too full, cut off extra muffin for a separate treat called “muffin tops”)

2)Combine dry ingredients in large bowl. Add eggs, milk, oil and vanilla, BEAT on medium speed 2 min. Stir in boiling water (batter will be thin). Pour into pans/tins.

3)Bake 30-35 min(22-25 min. for muffins) or until wooden pick inserted in center comes out clean. Cool 10 min.; remove from pan/tins to wire racks.

Cool completely

*check that the cocoa is indeed 0 sugar on the Nutrition Facts. Original recipe called for 2 cups sugar but that is too sweet!
