Japan Has the World Beat With Vending Machines!

Japan boasts over 5 million (one for every 23 people!) selling everything from socks to noodles and more. Still, even in the United States, a new generation of machines is bringing a new level of customization and convenience to the vending category.

Some of 'Consumer Eyes' favorites:

Customizable Coke and Ice Cream

Called the "fountain of the future" by Coke, the Freestyle soda machine has a touchscreen interface that offers consumers over 100 flavor options, allowing them to mix custom beverages on the spot. Similarly, the new MooBella machine uses a patented process to let consumers "flash freeze" custom ice creams from 12 different flavors, 3 different mixes, and 2 different ice cream types (premium and light). Freestyle is currently test-marketing in Atlanta and Los Angeles, while MooBella will roll out 100 machines over the next 6 months, starting in New England.

Konvenient Kosher

What to do if you're stuck in an airport or hospital waiting room and you only eat kosher? A fast-growing line of vending machines addresses this very problem. Kosher Cart machines dispense a variety of hot dogs and sausages, while Kosher Café offers meat-free snacks like mozzarella sticks, knishes and quiche. (Kosher dietary laws forbid the mixing of meat and dairy.) Two years ago you could only find the machines in the hospitals and airports of New York City. Last summer they installed machines at Boston's Fenway Park!

A Local "Vending" Machine

This last innovative vending machine hasn't announced plans for these shores... yet. Starting this fall, German farm Peter-und-Paul-Hof began selling fresh milk, eggs, butter, cheese, potatoes and sausage from vending machines in 13 German communities, effectively giving locals 24-hour access to a farmers' market. An additional bonus? Since there's no middleman, the prices are considerably lower than for fresh produce in retail stores.

MEXICAN MINESTRONI SOUP

Note: This recipe was contributed by Sean from Washington state who entered it in the recipe contest on www.healthy-kid-recipes.com!

Ingredients:

1-14.5 oz can Mexican Stewed Tomatoes

1-17 oz can Mexian Salsa (Casera)

8-oz can of chic peas (garbanzos)

2 stalks celery (diced)

1 tsp minced garlic

2 cups water

1 tsp Adobo seasoning/or 1/2tsp oregano & 1/tsp cumin

1 medium zuchinni bite size pieces

1/2 cup of instant barley or brown rice or elbow noodles

Diced avacado,shredded cheddar cheese and fritos for garnish

In a large saucepan add first 7 ingredients.

Simmer on med. for 15 min.

Meanwhile cook instant barley/brown rice or noodles.

Add zuchinni simmer for 5 minutes.

To serve scoop barley/rice or noodled into individual bowls,ladle soup over and top with chopped avacado and shredded cheddar.

Top with a sprig of cilantro!

Delicious and HEALTHY.

For the kids you can also top with Fritos.
